This may sound weird but: a little chalky? Like that calcium carbonate taste you used to get if you timed your breaths wrong beating out the erasers at school*? But somehow not unpleasant; I still liked it. It was like the Balcones Baby Blue in that it wasn't too challenging but it was less sweet. I could see it becoming a fall-back.

*Do they even do that anymore? Have they done that in forever?
