Wow. I’m going to go buy a bottle of this. As far as I’m concerned, this is the type specimen of bourbons. It is incredibly sweet and caramely and syrupy and really, just devastatingly good (if you have a palate more suited for bourbons, like I do.)
I also revisited the Balcones Baby Blue Corn Whiskey today. I could tell why it was overshadowed by everything else I tasted the night of the class. I can also see it becoming a go-to. It is smooth. It is unassuming. It is like water: present and satisfying and not too challenging but still really, very good. It could pair with anything or nothing.
